Commodity tallow is whatever's cheapest and can include filler. Suet comes from the fat around the kidneys and liver — where the nutrients actually are. Monica uses the suet. It costs more and performs better.

Monica wanted to avoid synthetic fragrance oils, so she uses essential oils in scented products instead. They are harder to work with, but she would rather take the time to get the scent right than use shortcuts she would not want in her own home or on her own skin.
